Kathleen Bennett’s Granola

Serves: 12 - 16
Dietary requirements: Dairy-free, Egg-free, Vegan (with substitutions)

Ingredients

  • 5 cups rolled oats
  • 1 cup soya flour
  • 1 cup ground nuts
  • 1 cup dessicated coconut
  • 1 cup wheat germ
  • 1 cup sesame seeds
  • 1 cup sunflower oil
  • 1 cup sunflower seeds
  • 1 cup honey (or maple syrup for vegans)
  • 1 cup raisins

Instructions

  1. Mix all ingredients, except the raisins, in a mixing bowl.
  2. Turn into a baking tin and cook at 180°C/350°F/Gas Mark 4 for about 40 minutes, turning several times, until crisp.
  3. Cool and then add raisins. Store in an airtight container.

Note: a cup of wheat or rye or barley flakes can be added to this recipe.
