Ingredients
- 110g/4oz wholewheat flour
- 50g/2oz vegetable fat
- 2 eggs or egg replacements (optional)
- 570ml /1 pint milk
- 110g/4oz grated cheese
- 2 tbsp cold water
- Selection of vegetables (e.g. cooked sliced courgette or carrots, sliced peppers, tinned chick peas, or beans)
- 1 tomato
Instructions
- Sift the flour into a bowl with a pinch of salt.
- Add the fat and mix with fingers until mixture looks like breadcrumbs.
- Mix to a dough with cold water and refrigerate for 1 hour to chill.
- Line a shallow dish with the pastry and prick base with a fork.
- Beat the eggs into the milk, season and pour into the flan case.
- Add the vegetables and sprinkle grated cheese evenly over the top.
- Bake in oven at 190°C/375°F/gas mark 5 for 30–40 minutes. Add sliced tomato 5 minutes before removing from oven.
