Celebrate St David’s Day and the arrival of Spring

It’s already February and 2016 seems to be flying by. While our weather continues to be unsettled and some areas have experienced flooding, there is some light on the horizon… to be more precise, the hours of daylight are gradually increasing. In many sheltered areas there is also another very welcome sign of Spring as so many daffodils are now in full bloom! In Wales daffodils are always associated with St David’s Day, which falls on 1 March. St David is the patron saint of Wales and, all over the world, Welsh men and women gather together and celebrate St David and all things Welsh through concerts, dinner and processions. For many other people, St David’s Day has come to mark the start of Spring, with longer days, some warm sunshine, and the aforementioned cheering daffodils! For vegetarians there is also another less well known reason to celebrate St David’s Day – St David has become known as the patron saint of vegetarians and vegans. Historic tales indicate that he was a vegetarian who ate only bread, herbs and vegetables and who drank only water. So to help you celebrate St Davids Day and the early days of Spring we’ve put together a new collection of delicious and easy-to-cook vegetarian recipes.
