Stuffed Baked Avocado

Serves: 1
Time to prepare: 10 mins
Time to cook: 40 mins
Dietary requirements: Egg-free, Vegan (with substitutions), Halal, Kosher


  • 1 medium/large avocado
  • 1/4 small onion – chopped
  • 1 oz/30g pine kernels
  • 3/4 oz/20g fresh breadcrumbs
  • 1oz/30g Red Leicester cheese – grated*
  • 1 tbsp olive oil
  • Salt & pepper to taste


  1. Mix breadcrumbs and grated cheese in a bowl.
  2. Scoop flesh from avocados (leaving sufficient to line the skin).
  3. Cut flesh into small pieces and put to one side.
  4. Stir fry onion lightly in the oil, then add avocado and fry lightly.
  5. Add pine kernels and continue to fry for about 2 minutes, to toast the kernels.
  6. Season mixture, put into avocado shells, and top with breadcrumb and cheese mixture.
  7. Bake at 150°C/350°F/gas mark 4 for 30 minutes.

*Omit cheese or use vegan cheese for the vegan version.

sorry but what are these pine kernels? can they be purchased at a whloe foods or large city markets? this site is exciting. I am not a vegetarian but a non meat eater for the most part. these recipes are great. thanks!

Assuming that you live in the UK, you’ll find them in most supermarkets and health food shops. You can visit, for example, and search for ‘pine nuts’ to see where they are on sale.

I can’t eat any type of seed or nut to severe diverticulitis…is there a substitute fro the Pine nuts?

The pine kernels are there mainly for texture, although they do contribute some useful protein to this dish. It’s fine to leave them out.
