Marinated mushrooms

​This recipe makes a perfect side dish for 2 people.

Dietary requirements: Dairy-free, Egg-free, Vegan

Ingredients

  • 500g mixed mushrooms, thickly sliced (oyster, shiitake, chestnut, field, portabello)
  • 1 spring onion, dark green part finely sliced (save white part of the onion for another dish)
  • 1 garlic clove, minced (or use 1/2 tsp garlic paste)
  • 1 tbsp tamari/soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp apple cider vinegar
  • 1/2 tsp fresh ginger, minced (or use 1/2 tsp ginger paste)
  • 1 tbsp cold water
  • 1/2 tsp brown sugar

Instructions

  1. In a large bowl combine all ingredients.
  2. Allow to marinade for at least 1 hour or overnight. No cooking required.
