Orange and Wakame Salad

Ingredients

  • 1/4 cup dried wakame
  • 3 oranges
  • 1 large spring onion
  • Iceberg or romaine lettuce, shredded or chopped thinly
  • 1/4 cup sliced almonds
  • Pinch of ground black pepper

For the dressing

  • 3 tbsp extra virgin olive oil
  • 3 tbsp sesame oil
  • 1 garlic clove
  • 1-inch chunk grated fresh ginger
  • 2 tbsp soy sauce or tamari
  • 2 pinches of cayenne pepper
  • 2 tbsp fresh lemon juice
  • 1 tbsp maple syrup or sweetener of choice

Instructions

  1. Soak the wakame in warm water for 5 minutes until it softens.
  2. Drain and squeeze out the water, cut the spine off and discard. Lay out the wakame to dry while preparing the other ingredients.
  3. Peel the oranges, separate into segments and cut into bite-size pieces. Place in a bowl.
  4. Chop the seaweed into small pieces and add to the bowl.
  5. Add the onion and lettuce.
  6. Blend all the dressing ingredients together in a blender. Pour over the salad.
  7. Sprinkle almonds on top (they can be lightly toasted if you prefer). Add black pepper to taste.
