These biscuits also freeze okay but benefit from putting back in the oven afterwards to crisp up.

Dietary requirements: Egg-free, Halal, Kosher, Vegan (with substitutions)
Ingredients
- 4oz/110g butter (or vegan margarine)
- 2oz/55g caster sugar
- 4oz/110g plain flour (a mix of white and wholemeal works well)
- 2oz/55g ground hazelnuts
- A few whole roasted hazelnuts for decoration
Instructions
- Cream together the butter/marg and sugar.
- Stir in the flour and ground hazelnuts.
- Knead lightly and roll onto a lightly floured surface.
- Cut with a 2” round cutter or whatever shape takes your fancy and place on a baking tray.
- Decorate each one with half a roasted hazelnut.
- Cook at 170°C/325°F/gas mark 3 for 10–12 minutes.
- Remove with a palette knife and leave to cool.
