Hazelnut Shorties

These biscuits also freeze okay but benefit from putting back in the oven afterwards to crisp up.

Serves: Makes about 30
Dietary requirements: Egg-free, Halal, Kosher, Vegan (with substitutions)

Ingredients

  • 4oz/110g butter (or vegan margarine)
  • 2oz/55g caster sugar
  • 4oz/110g plain flour (a mix of white and wholemeal works well)
  • 2oz/55g ground hazelnuts
  • A few whole roasted hazelnuts for decoration

Instructions

  1. Cream together the butter/marg and sugar.
  2. Stir in the flour and ground hazelnuts.
  3. Knead lightly and roll onto a lightly floured surface.
  4. Cut with a 2” round cutter or whatever shape takes your fancy and place on a baking tray.
  5. Decorate each one with half a roasted hazelnut.
  6. Cook at 170°C/325°F/gas mark 3 for 10–12 minutes.
  7. Remove with a palette knife and leave to cool.
