Chickpea Salad

Serves: 4

Dietary requirements: Dairy-free, Egg-free, Vegan

Ingredients

  • 1 tin of chickpeas
  • 1 small onion, finely chopped
  • 2 tomatoes, skinned and chopped
  • 1 red pepper, diced
  • 1 tbsp chopped celery
  • 1 tbsp chopped parsley
  • 1 tbsp vinaigrette
  • Lemon juice to taste

Instructions

  1. Mix all the ingredients together.
  2. Cover and allow to stand for 2/3 hours to allow the chickpeas to absorb the juices.

Note: The pepper can be grilled, skinned and soaked in a little lemon juice for an hour to improve the flavour.
