Mincemeat Muffins

Serves: 12–14
Time to prepare: 10 mins
Time to cook: 20 mins
Dietary requirements: Dairy-free, Egg-free, Vegan

Ingredients

  • 350g/12oz self-raising flour
  • 15ml/1 tbsp baking powder
  • 175g/6oz caster sugar
  • 135ml/9 tbsp sunflower oil
  • 375ml/12fl oz water
  • 150g/5oz vegetarian mincemeat
  • 15ml/1 tbsp demerara sugar
  • Pinch cinnamon

Instructions

  1. Preheat the oven to 190°C/375°F/gas mark 5. Line a 12 hole muffin tin with deep muffin cases.
  2. Sieve the flour and baking powder into a large mixing bowl. Add the sugar and mix well.
  3. Add the oil and water and whisk together quickly.
  4. Fold in the mincemeat and spoon into the muffin cases (about 2/3 full). Mix the demerara sugar and cinnamon together and sprinkle over the top of each. Put the muffin tins into the oven immediately.
  5. Bake until well risen and golden, about 15–20 minutes. Cool on a wire rack.

Can the mincemeat muffins be frozen

Hi Kate,
I have frozen them and they come out OK. Make sure they are placed either into a sealed container or wrap in cling film in order to prevent frost burn.

Fantastic recipe. Frozen equally good. 20 secs in microwave to defrost individual ones. Such a wonderful Christmas flavour.

Hi! I made these last night. So light and fluffy! I had loads left over as it was quite runny in consistency. I didn’t have muffin tins - I used 2 fairy cake type baking trays.  I made 24 plus a small loaf! Have I gone wrong somewhere?

Hi Louise, glad you tried the muffins.
I think the cases you used may have been smaller than the ones intended in the recipe. Fairy cakes are generally smaller than muffins hence making more than the recipe states. The mix is quite wet and if your mix resulted in a light cake I think you did measure OK. When I make them they are more like the size of muffin you get in coffee shops.
