This porridge is a highly nutritious start to the day – especially good on cold mornings. The secret of its delicious taste lies in soaking the oatmeal or oat flakes and dried fruit overnight. The seeds give a good mix of omega fats as well as adding an extra dimension to the taste.

Dietary requirements: Dairy-free, Egg-free, Halal, Kosher, Vegan (with substitutions)
Ingredients
1 measure* of oatmeal or 2 measures* of oat flakes
2 measures* of soya milk
4 dried apricots – chopped
Small handful of dried cranberries
Small handful of raisins
2 to 3 measures* of boiled water (depending on how ‘runny’ you like your porridge)
Sprinkle of pumpkin seeds
Sprinkle of sunflower seeds
Sprinkle of cracked linseed
(Honey or brown sugar ‘to taste’ – but not honey for vegans)
*Approx 150 ml – a ramekin dish is perfect as a quick measure
Instructions
Put the oatmeal, apricots, cranberries and raisins in a microwave-proof dish; add the soya milk; mix with a whisk and leave to soak overnight.
The following morning: add the just-boiled water to the oatmeal mix and stir with a whisk.
Cover and microwave on high power for 3–4 minutes.
Leave to stand for 1 minute; then add the seeds and stir thoroughly.
For the sweet-toothed: stir in honey or brown sugar to taste – and serve. (Note: please use brown sugar rather than honey for vegans.)
