Baked Fruit Pudding

Serves: 4
Dietary requirements: Dairy-free, Egg-free, Vegan

Ingredients

  • 4oz/100g sugar
  • 1oz/25g vegan margarine
  • 4oz/100g raisins
  • 1.5fl oz/150ml boiling water
  • 1 tsp vanilla essence
  • 1oz/25g chopped nuts
  • 3oz/75g plain flour
  • 1 tsp baking powder
  • Approx 5 tbsp soya milk

Instructions

  1. Place half the sugar and half the margarine with the raisins in a small saucepan with the boiling water. 
  2. Heat slowly until the sugar dissolves and then boil steadily for 10 minutes. Add the vanilla essence.
  3. Meanwhile, cream the rest of the sugar and margarine. 
  4. Mix the flour with the baking powder and add to the sugar and margarine. 
  5. Stir in enough soya milk to make a thick batter consistency. 
  6. Turn the mixture into a greased ovenproof dish and pour the hot sauce over the top with a sprinkling of nuts. 
  7. Bake in a moderate oven 350°F/180°C/gas mark 4 for 30 minutes. Serve immediately.
