Fruit Deluxe

This pudding is simple to make, and the fruits can be varied according to season. (Soft fruits need not be poached. Dried fruits can be soaked overnight prior to preparation.) The topping is similar to a brûlée.

Tip – use soya yoghurt to make a vegan version.

Dietary requirements: Egg-free, Gluten-free, Vegan (with substitutions), Wheat-free

Ingredients

  • 1 pear*
  • 1 cooking apple*
  • 2 plums*
  • 2 apricots* (*or any mixture of fresh/dry fruits, poached or soaked as appropriate)
  • 1 tsp ground ginger
  • 2 tbsp icing sugar
  • 600ml/1 pint Greek yoghurt
  • 1 tsp almond essence
  • 80g/3oz brown sugar

Instructions

  1. Peel the apple and pear; stone the plums and apricots and slice the fruit.
  2. Put in pan with 2 tablespoons of water and poach for 10 minutes. Leave to cool.
  3. Stir in ginger and put fruit into heatproof serving dish.
  4. Mix the almond essence and icing sugar into the yoghurt, and cover the fruit with this mixture.
  5. Sprinkle the brown sugar over the topping and place under grill for a few minutes until the sugar has melted and formed a crust.
  6. Place in fridge until chilled – around 45 minutes.
