Ingredients
50g/2oz millet flakes
1 orange
110g/4oz mixed dried apricots, prunes and dates
275ml/10 fl oz water
Instructions
Chop fruit and soak in just enough water to cover, for 1 hour.
Bring to boil and cook for 2 mins.
In a separate pan add water to millet, mix well and gently bring to boil, stirring continuously to avoid sticking. Simmer until cooked (about 25 minutes).
Liquidise the fruit, remaining water and millet together.
Add lemon rind and juice.
Serve with coconut cream or vegan yoghurt.
