Millet, Apricot & Prune Pudding

Serves: 4–6
Time to prepare: 15 mins
Time to cook: 30 mins
Dietary requirements: Dairy-free, Egg-free, Gluten-free, Halal, Kosher, Vegan, Wheat-free

Ingredients

  • 50g/2oz millet flakes
  • 1 orange
  • 110g/4oz mixed dried apricots, prunes and dates
  • 275ml/10 fl oz water

Instructions

  1. Chop fruit and soak in just enough water to cover, for 1 hour.
  2. Bring to boil and cook for 2 mins.
  3. In a separate pan add water to millet, mix well and gently bring to boil, stirring continuously to avoid sticking. Simmer until cooked (about 25 minutes).
  4. Liquidise the fruit, remaining water and millet together.
  5. Add lemon rind and juice.
  6. Serve with coconut cream or vegan yoghurt.
