Giant Fried Mushroom on Toast

Ingredients

  • Oil spray
  • 1–2 giant mushrooms per person
  • 1–2 slices of wholemeal bread per person
  • Aminos OR a little tamari soya sauce
  • Freshly ground black pepper

Instructions

  1. Wipe the mushrooms clean with kitchen towel. Remove the stalks.
  2. Heat a large frying pan and squirt with a little oil spray. Place mushrooms flat in the pan and cook until tender – about 5–7 minutes, depending on how thick the mushrooms are. Cover with lid if necessary. Test with a sharp knife to make sure they are cooked all the way through.
  3. Just before serving, make the toast. Add a little aminos or tamari to the pan, coat the mushrooms in this and serve hot on the toast, with a grinding of black pepper if desired.
