Chickpea Croquettes

Serves: 2–3
Time to prepare: 1 hr 15 mins
Time to cook: 20 mins
Dietary requirements: Dairy-free, Egg-free, Halal, Kosher, Vegan

Ingredients

  • 1 tin cooked chickpeas
  • 2 cloves garlic, finely chopped
  • 2 tbsp chopped parsley
  • 1 medium potato, cooked
  • 1 tbsp soya sauce
  • 1 dsp lemon juice
  • Salt & pepper to taste
  • Flour for coating
  • Vegetable oil for frying

Instructions

  1. Mash chickpeas with garlic and potato.
  2. Add parsley, soya sauce, lemon juice and seasoning.
  3. Mix well and roll mixture into croquette shapes in the flour.
  4. Leave in the fridge for 1 hour if possible.
  5. Fry gently in oil until golden brown on all sides.
