Ingredients
- 2 large onions, thinly sliced
- 2 cloves garlic, crushed
- 4 tbsp olive oil
- 4 courgettes, sliced thinly
- 6 tomatoes, skinned and chopped
- 2 tbsp tomato puree
- ½ tsp dried oregano
- ½ tsp dried marjoram
- 2 tins chickpeas – drained
- 70ml/½ pint water
Instructions
- Gently fry onion and garlic in the oil in a saucepan for a few minutes until onion soft.
- Add courgette and continue to fry gently for 5 minutes.
- Add tomatoes, puree, herbs and seasoning and cook for a minute, stirring.
- Add chickpeas and water, stir and bring to boil.
- Simmer with no lid for 20 minutes.
- Serve with rice, baked potato or French bread.
