Mixed Greens and Seaweed Pesto

Dietary requirements: Dairy-free, Egg-free, Gluten-free, Vegan, Wheat-free

Ingredients

  • 1–2 cloves garlic
  • ¼ cup olive oil
  • ¼ cup walnuts or pine nuts or combination of both
  • 1 cup mixed kelp and sea sprigs or seaweed of your choice
  • 1 cup fresh basil
  • 1½ cups spinach
  • 2–3 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • Couple pinches salt

Instructions

  1. Blitz garlic with olive oil in food processor for a few seconds.
  2. Add nuts and blitz for a few seconds.
  3. Add remaining ingredients and blitz until combined. You may need to add some water to loosen.
  4. Serve with pasta, bread or crackers and vegan cheese and fruit.
