This super-quick, vegan ‘cheese’ sauce is great with pasta (macaroni or penne), potatoes and greens, baked potatoes, or with stuffed savoury pancakes. It’s also nice in layered bakes such as lasagna, or on top of a veggie casserole.

Ingredients
90ml/3fl oz water + 1 tbsp
3 tbsp tahini (sesame paste)
1 tbsp nutritional yeast flakes (sold in good health stores)
½ tbsp fresh lemon juice
1 small shallot or ¼ small red onion, finely chopped
½ tsp yeast extract or more if using low-salt variety
Instructions
Combine all ingredients and blend until smooth.
Heat gently, without boiling, before pouring over food.
