Vegan Piperade

For a light meal this quick and versatile vegan dish can be served by itself or with garlic bread. Alternatively serve with chips or rice for a more substantial meal.

Ingredients

  • 1 onion
  • 1 red pepper
  • 1 yellow pepper
  • 1 clove of garlic
  • 4 tbsp olive oil
  • 4 tomatoes
  • 1 tsp mixed dried herbs
  • 350g/12oz tofu
  • 1 tsp turmeric
  • Pinch smoked paprika

Instructions

  1. Thinly slice the onion, peppers and crushed garlic and fry gently in the oil until soft.
  2. Cover the tomatoes with boiling water, prick skins and stand for a minute or so. Skin and chop.
  3. Add tomatoes and herbs to the pan and continue cooking for another 12–15 minutes.
  4. Chop the tofu into small pieces, add turmeric and paprika and mash with fork.
  5. Add to pepper mixture, stir well and cook for 3–5 more minutes, stirring continuously.
