Ingredients
150g/6oz lasagne sheets
200g soya mince (hydrated/frozen)
1 small can chopped tomatoes
1 heaped teaspoon tomato puree
1 tsp sugar
1 tsp vegetable stock or 1 stock cube
2 finely chopped carrots
1 tbsp vegetable oil
1 small chopped onion
‘Cheese’ sauce:
375ml/ 2/3 pint soya milk
25g/1oz margarine
25g/1oz plain flour
1 level tsp mustard powder
100g/4oz soya cheese (save a little for the topping)
Instructions
Preheat oven to 350°F/180°C/gas mark 4.
Heat oil in pan, add chopped onion and cook until soft.
Add carrots and mince and stir in tomatoes, puree, sugar and vegetable stock.
Cover with water and leave to simmer.
Prepare cheese sauce: melt margarine, add the flour and mustard powder and cook for 1 minute. Gradually add the soya milk. Remove from the heat and stir in cheese. Return to the heat and stir until the cheese almost dissolves. Remove from the heat.
Place a layer of lasagne sheets in a shallow ovenproof dish, cover with half the mince mixture. Add another layer of lasagne sheets and half of the cheese sauce. Put on the remaining mince, a layer of lasagne sheets and then the remaining sauce. Sprinkle with grated cheese.

I did the reciepe and 75g of lasagne was not enough I had to use twice the amount for it to work
