What makes soda bread is, well, bicarbonate of soda! Most risen bread uses yeast and needs time to prove. Soda bread speeds the whole process up but tends to have a slightly heavier texture. If you have not made bread before this is a good one to start with.

Cook’s tips: When I made this bread I wanted to give it a little extra flavour, hence adding the mixed herbs. Let your creative spirit flow with your bread. How about adding sliced olives or chilies, sundried tomatoes, seeds or nuts? Think of any other flavoured breads you find in bakeries and supermarkets. You have the basic recipe, time to get creative!
