Knickerbocker Glory

I can’t think of a more fun dessert. Although traditionally served in a tall slim glass, a wine glass works just as well.

Dietary requirements: Dairy-free, Egg-free, Gluten-free, Vegan, Wheat-free

Ingredients

  • 2 tbsp fruit syrup or vegan chocolate sauce
  • 1 small pot vegan jelly
  • 100g/3½oz tinned fruit cocktail or frozen fruit
  • 4 scoops of vegan ice cream
  • 75ml/2½fl oz plant-based cream, whipped
  • 1 tbsp mixed chopped nuts

Instructions

  1. Place a dollop of syrup at the bottom of each serving glass.
  2. Stir up your jelly pot with a fork to make it easier to work with, then divide between the glasses, along with the fruit.
  3. Add two scoops of ice cream. Top with whipped cream and decorate with syrup and chopped nuts.

Chef’s tip 

Frozen or tinned fruit are suggested just to make things easier. Fresh fruit like strawberries, bananas and blueberries would also work. Allow your frozen fruit to thaw before assembling. Putting your glasses in the fridge for 10 minutes prior to serving will keep the ice cream from melting too quickly.
