This easy-to-prepare cream alternative can be used as an accompaniment to many desserts. Not only does it taste good, but it also contains a significant amount of protein.
- 400g/14oz silken tofu
- 100g/3½oz cashew nuts
- 1 tbsp golden syrup or maple syrup
- 1 tsp vanilla essence
- 100ml soya cream/soya milk
- Place all the ingredients into a food processor and blend until smooth. Alternatively, a stick blender will work just as well.
- For a thinner cream, add a little extra soya cream or soya milk.
