Quick Potato Salad

Serves: 4

Dietary requirements: Dairy-free, Egg-free, Gluten-free, Vegan, Wheat-free

Ingredients

  • 400g/14oz salad potatoes, cut in half
  • 1 tbsp vegan mayonnaise
  • ½ tsp vinegar
  • ½ tsp French mustard
  • 1 spring onion, chopped

Instructions

  1. Cook the potatoes and drain.
  2. Mix the mayonnaise, vinegar and mustard together and mix into the potatoes. No need for them to cool first.
  3. Place it into your serving dish and garnish with the spring onions. Season with salt and pepper.
