Tomato & ‘Feta’ Salad

Serves: 5

Dietary requirements: Vegan

Ingredients

  • 6 large tomatoes
  • 1 red onion
  • 40g diced vegan Greek-style cheese
  • Few sprigs of thyme
  • Balsamic glaze (to taste)

Instructions

  1. Finely chop the tomatoes and red onion.
  2. Add thyme leaves and feta.
  3. Coat with balsamic to taste.
  4. Add any seasoning just before serving to avoid drawing moisture out of tomatoes.
