Quick Baked Beans

Serves: 2

Dietary requirements: Dairy-free, Egg-free, Gluten-free, Vegan, Wheat-free


  • Good lug of olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp mixed herbs
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tbsp tamari or soy sauce
  • 1 tbsp apple cider vinegar
  • 1 x 400g tin tomatoes
  • 1 tbsp maple syrup
  • 1 x 400g tin borlotti or cannellini beans
  • 1 tbsp tomato purée


  1. Heat a pan over a medium heat.
  2. Add olive oil and fry the onions until translucent.
  3. Add the garlic and fry for a further minute.
  4. Add the herbs and spices, then add the tamari, apple cider vinegar, tomatoes, maple syrup, beans and tomato purée.
  5. Bring to the boil then let simmer for 15–20 minutes until it thickens.
