Brown Rice Pudding with Apricots

Time to cook: 2 hr 30 mins
Dietary requirements: Egg-free, Gluten-free, Halal, Kosher, Vegan (with substitutions), Wheat-free


  • 40g/1.5oz brown rice
  • 25g/1oz dried apricots
  • 850ml/1.5 pints milk (or soya milk*)
  • 1 tbsp brown sugar (if required – to taste)


  1. Soak the apricots for 2–3 hours in just enough water to cover.
  2. Chop apricots thoroughly.
  3. Wash the rice, drain and put in ovenproof pie dish with the milk* and apricots. Add sugar if required.
  4. Bake in preheated oven at 140°C/275°F/gas mark 1 for 2–2.5 hours. Stir half-way through and just before the end of the cooking time.
  5. Serve with a little evaporated milk, cream or coconut cream*.
