Ingredients
40g/1.5oz brown rice
25g/1oz dried apricots
850ml/1.5 pints milk (or soya milk*)
1 tbsp brown sugar (if required – to taste)
Instructions
Soak the apricots for 2–3 hours in just enough water to cover.
Chop apricots thoroughly.
Wash the rice, drain and put in ovenproof pie dish with the milk* and apricots. Add sugar if required.
Bake in preheated oven at 140°C/275°F/gas mark 1 for 2–2.5 hours. Stir half-way through and just before the end of the cooking time.
Serve with a little evaporated milk, cream or coconut cream*.
