Tiramisu – Italian dessert literally meaning ‘pick me up’. This recipe is a quick Tiramisu flavoured dessert, made using biscuits instead of sponge fingers. The best results are achieved using strong dark or medium roast ground coffee, instant coffee is too bitter. For the base crumbled biscuit could be added to create more texture.

Ingredients
3 vegan biscuits (digestive or rich tea)
1 tbsp cocoa powder
For the coffee
80ml of strong coffee
1 tsp sugar
(optional) Coffee liquor
Vegan cream
150g silken tofu
1 tbsp sugar
2 drops of vanilla essence
1sp lemon juice
Instructions
Prepare the coffee using a cafetière and pour into a small bowl. Make sure no coffee grinds get into the bowl.
Dissolve the sugar and let it cool. Optional: add coffee liquor if desired.
Meanwhile, prepare the cream. Add all ingredients to the food processor or use a stick blender. Blend until the cream is smooth.
When coffee soaking liquid has cooled start assembling the dessert by dividing the cream in three.
Start by dipping the biscuit in cold coffee for a couple of seconds and carefully removing it with a fork, letting it drip. Place it in the dessert dish.
Add one part of the cream on top of the biscuit.
Repeat steps 5 & 6 until no more biscuits are left. Top the last biscuit with the rest of the cream.
Place the dessert in the fridge and chill for at least 30 minutes. Dust with cocoa powder before serving.
