Sausage and Pasta Salad

NB. a bag of good quality mixed salad could be used instead if preferred – try one with dark leaves and other goodies!

Dietary requirements: Vegan (with substitutions)

Ingredients

  • 1 portion of pasta
  • 1⁄4 vegetable stock cube or ½ tsp bouillon powder*
  • 2 or 3 veggie sausages, cooked and sliced*
  • 1 stick celery, chopped
  • 1⁄4 bag of beansprouts
  • 1 large handful of spinach leaves
  • ½ red pepper, chopped into small pieces
  • 2 large lettuce leaves, chopped (not iceberg)
  • 1⁄4 cucumber, diced small
  • Salad dressing*

Instructions

  1. Bring a large pan of hot water to the boil. Add the stock cube/powder and cook the pasta in it – check the instructions on the packet.
  2. While pasta is cooking, cook the sausages and chop up the salad ingredients.
  3. Drain pasta and let it cool in a big bowl.
  4. Finish preparing the other ingredients.
  5. Add the sausages, salad vegetables and herbs.
  6. Choose a salad dressing (e.g. Italian Tomato Basil Dressing). In a small bowl, mix the ingredients together thoroughly.
  7. Pour dressing over the salad and mix well with salt and black pepper to taste.

For a vegan version, use vegan bouillion powder or vegetable stock, vegan sausages and salad dressing.
