Crunch, crumble and celebrate Walnut Day and Biscuit Day in May 2026

Posted by Claire on 16/04/26 in Recipes

29 May is National Biscuit Day, so why don't you bake something special for someone in your care, and give it a little crunch, writes Vegetarian for Life (VfL) chef Claire.

There’s something magical about the combination of walnuts and biscuits. Maybe it’s the earthy crunch of the nuts, or the comforting, buttery crumble of a freshly baked biscuit. There are two opportunities to celebrate this paring; Biscuit Day on 29 May, and a US import – Walnut Day on 17 May.

Why walnuts and biscuits?

Walnuts are one of our oldest cultivated foods and have been cherished for almost three millennia – for their rich, slightly bitter flavour and for their nutritional benefits. They are packed with healthy fats, antioxidants, and they give depth to both sweet and savoury recipes. They're also a great way to add protein to the diet of an older person in your care.

Meanwhile, biscuits are the ultimate comfort food – whether you prefer them soft and crumbly, crisp and golden, or somewhere in between. Pair them with walnuts for a match made in baking heaven.

This combination isn’t just about indulgence – it’s about craftsmanship. Baking walnut biscuits invites you to experiment; add maple syrup for sweetness, dark chocolate for richness, or a touch of cinnamon for warmth.

How to celebrate

You don’t need a grand plan to enjoy Walnut Day and Biscuit Day. Sometimes the simplest traditions are the most meaningful.

  1. Bake a batch from scratch. There's nothing like the alluring aroma of biscuits baking in the oven. Try a classic walnut biscuit recipe or put your own twist on it. Even imperfect shapes taste great when they’re home-made. If you are new to baking why not try these simple Lemon Shortbread Biscuits. Zesty, crisp, gluten-free shortbread biscuits with bright lemon zest and a light sugar sparkle – simple, citrusy, and perfect with tea. Walnuts make a great inclusion. Go ahead and add some toasted walnuts to the dough – delicious biscuits with flavourful walnuts – lightly sweet and gently crisp. They have a soft, crumbly texture and a warm, nutty flavour, baked until golden for a simple, comforting treat.
  2. Share the joy. Food has a way of bringing people together. Pack a few biscuits for friends, family, or colleagues. A small, thoughtful treat can turn an ordinary day into something memorable.
  3. Pair with your favourite drink. Walnut biscuits pair beautifully with tea, coffee, or even a glass of your favourite plant milk. Take a moment to pause, sip, and savour, this day is as much about mindfulness as it is about flavour.
  4. Get creative. Turn your biscuits into something new: crumble them over yoghurt, layer them into a dessert, or sandwich them with vegan cream or jam. Let your imagination lead the way.

They make a great addition to our chocolate pots with piped biscuits. Home-made piped biscuits you can decorate with icing – rich, fun, and lovely to serve with chocolate pots.

Try this savoury treat – a Quick Walnut Pâté spread on a savoury cracker. Walnut pâté pairs well with crunchy bases like toast or crackers, fresh vegetables such as carrots and cucumber, and sweet fruits like apples or pears to balance its richness. You can also serve it with cheese, olives, or roasted peppers for extra flavour, or use it in sandwiches, wraps, or grain bowls.

Or why not try on our Flatbreads? A drizzle of olive oil, fresh herbs, or a splash of lemon juice can enhance it further.

A little moment of comfort

So this May, grab a handful of walnuts, preheat your oven, and let the simple joy of baking fill your home. Because sometimes, happiness really is as easy as a biscuit.
