Virtual Lunch Club – Tuesday 25 May

Join us via Zoom, for V for Life's next virtual lunch club – curry night – on Tuesday 25 May, 1pm. 

Check out the recipes below, buy your ingredients, and cook the dishes on the day, ready for the Zoom chat at 1pm.


Vegetable Korma

Pea, Carrot and Cashew Pilau

Spicy Courgette and Pea Fritters


You'll need to buy or find the following ingredients in your cupboards:

For the Korma:

1 large onion, finely chopped

2 tbsp vegetable oil

3 fat cloves of garlic, crushed

1 thumb-sized piece of ginger, grated

1 heaped tsp each of ground cardamom, coriander, cumin and turmeric

75g ground almonds

2 peppers

175g green beans

400ml tin of coconut milk

2 tsp mango chutney

100ml water

½ vegetable stock cube

1 courgette

100g frozen spinach

Salt to taste

 

For the Pilau Rice: 

175g/6oz basmati rice, washed and soaked for 1 hour

2 tbsp vegetable oil

½ tsp cumin seeds

1 stick cassia bark (optional)

2 cloves

1 green chilli (optional)

1 small onion, sliced

½ tsp garam masala

¼ tsp turmeric

½ tsp chilli powder

1 carrot, cubed (1cm/½ inch cubes)

½ cup peas

10–12 cashew nuts, lightly fried

330ml/12fl oz boiling water

1 tsp salt

 

For the Fritters: 

2 medium courgettes, grated

100g plain flour (gluten) (*or gram flour)

1 small onion, finely chopped

50g frozen peas, defrosted

2 cloves of garlic, finely chopped

Salt to taste

1 green chilli, chopped

Handful coriander, chopped

1 tsp chilli powder

1 tsp garam masala

1 tsp cumin seeds

Oil for cooking

1 tsp baking powder


You of course don't need to make all of the dishes, or if you'll struggle to cook, feel free to join us with a ready-made curry or whatever you're having for lunch that day.
