Age UK Salford happy with ‘sad cake’ demonstration

VfL Roving Chef Alex recently gave a cookery demonstration for Age UK Saford. Around 15 people attended the event held at The Chandos Sports Club in Salford.

Alex demonstrated vegan adaptations of stalwart local recipes Lancashire hot pot and apple cake.

“I have visited Age UK Salford a few times and I am always made to feel very welcome,” says Alex. “On my last visit I was asked if I would be making sad cake. That was a new one to me as I have not heard of this before.” He explains that a little internet search brought up two styles of cake, one from the US and one from Lancashire. They share the same name but are quite different cakes.

“The US version is a sponge style that over-rises, then sinks, which creates a dense and sticky consistency,” says Alex. To be honest I think I have made a few sad cakes in the past, more from accident than design!”

However, the Lancashire version is quite different cake and as it turned out he did know what it was. He says a sad cake is generally dried fruit wrapped into a rich pastry, much like local delicacies Eccles cakes or Chorley cakes.

“Every day is a school day,” Alex observes.
