Virtual Lunch Club – Tuesday 28 September

Join us via Zoom for V for Life's next virtual lunch club, Tuesday 28 September, for a tasty brunch of pancakes, smashed avocado and home-made baked beans.

Check out the recipes below, buy your ingredients and cook the dishes on the day ready for the lunch club at 1pm.


Vegan Pancakes 

Smashed Avocado 

Quick Baked Beans 


You'll need to buy or find the following ingredients in your cupboards:

Pancakes:

  • 1 cup flour
  •  ½ tsp sugar
  •  ¼ tsp salt 
  • 2 tsp baking powder 
  • 2 tbsp rapeseed oil 
  • 1 cup oat milk
  • Toppings of your choice

Smashed Avocado:

  • 1 ripe avocado
  • Juice of ½ lime
  • 1 tomato, finely chopped with centre removed
  • Pinch chilli flakes
  • Good lug of olive oil
  • Handful coriander, roughly chopped
  • A pinch of salt

Baked Beans:

  • Good lug of olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp mixed herbs
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tbsp tamari or soy sauce
  • 1 tbsp apple cider vinegar
  • 1 x 400g tin tomatoes
  • 1 tbsp maple syrup
  • 1 x 400g tin borlotti or cannellini beans
  • 1 tbsp tomato purée

Talk cookery, recipes and more, and meet likeminded people from across the UK.

You of course don't need to make all the recipes. If you'll struggle to cook on the day, feel free to join with a cup of tea or whatever you're having for lunch that day.

Open to vegetarians, vegans and meat reducers aged 65 and over.
